Free From Diabetic Fruit Cake

 

8 oz (225g) Plain Flour
3 tsp baking powder
2 tsp Mixed Spice
1 lb 8oz (700g) Mixed Fruit (Generally sultanas/raisins, apricots, dates)
Rind of Orange or Lemon
½ pint Water
Juice of a large orange

Method:

  • Soak the fruit in the liquid overnight (liquid should just cover fruit)
  • Add the dry ingredients and mix
  • Bake in a lined 2 lb loaf tin for approximately 1 ½ hours at 160°C(Gas Mark 3) covering for last ½ hour
